Combat Salmonella and Other Pathogens in the Scalder With FreshFx – A New Safe Antimicrobial Treatment for Poultry Processing By SteriFx, Inc.
SteriFx, Inc. announces that FreshFx® antimicrobial solution is USDA approved as a safe and effective treatment against Salmonella and other pathogens when used in the scalder. Its unique non-toxic formulation provides superior activity over a broad
temperature spectrum. Moreover, FreshFx maintains antimicrobial activity even
in the presence of the accumulated organic load found in scalder water. This contrasts sharply with alternatives that would “gas-off” at higher temperatures or be inhibited by the organic load, reducing effectiveness.
Scalding is one in a series of steps requiring careful control of Salmonella, E. coli, Campylobacter and other pathogens when processing carcasses. Opportunities exist for cross-contamination from one bird to another as bacteria may embed within the feather follicles during picking, making them less accessible to subsequent antimicrobial treatments. Using FreshFx during scalding addresses this problem.
In addition to the scalder, FreshFx can be used in various steps during processing including at pre-evisceration, IOBW, OLR, and post-chill sprays and dips. Multiple antimicrobial interventions ultimately provide operating cost savings through decreased contamination, improved product quality, reduced water use, and minimized reprocessing labor.
“Using FreshFx in the scalder is one way to improve food safety by reducing contamination,” says John Dankert, Ph.D., SteriFx Vice President of Research and Development. “The high temperature of the water in the scalder alone is not sufficient to significantly cut down the number of pathogens. An antimicrobial intervention treatment in the scalder should be considered. Achieving 1 to 3 logs of reduction here make subsequent interventions much more effective for the final product.”
FreshFx’s patented formula is GRAS (Generally Recognized As Safe) and USDA approved. It is a powerful antimicrobial treatment providing an extremely cost-effective means to control Salmonella, E. coli, Campylobacter, and Listeria outbreaks in poultry processing with low environmental impact. It is supplied as a stable solution concentrate that is diluted on-site for application, eliminating the need for any special mixing equipment or chemical reactions.
SteriFx professionals are ready and available to assist processors with microbial contamination and control. FreshFx antimicrobial solution is available immediately from SteriFx®, Inc.
